Breakfast Dishes – English Muffins
Ingredients:
Plain flour 1¾ cups
Natural yogurt 1/4 cup
Active dry yeast 7 g package
Tepid water 1/2 cup
Salt ¼ tsp
Fine semolina or cornmeal 1/8 cup
Oil, for greasing
Method:
Place the yeast and half of the tepid water in a bowl and mix until the yeast has completely dissolved. Add the remaining water and the yogurt and mix well. Set it aside for 10 minutes. Sift the flour into a large bowl and add salt. Mix lightly and make a well in the center. Pour in the yeast mixture and mix properly to form a soft dough. Turn out the dough onto a floured counter and knead well until its smooth. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place until it has doubled in size. Turn out again onto the floured counter and knead lightly. Roll out the dough to a thickness of one-half inch and using a large cookie cutter cut into rounds. Re-roll the trimming of the dough and make additional muffins. Scatter the semolina or cornmeal over each muffin. Place them on a lightly floured baking sheet, cover, and let rise again for 30-40 minutes. Heat a large skillet and lightly grease with oil. Cook the muffins for 7-8 minutes on each side, taking care not to burn them. Serve hot with loads of butter. This completes one of my favorite breakfast dishes.
Breakfast Dishes – Blueberry Pancake
Ingredients:
All-purpose flour 175 g
Baking powder 1/2 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Sugar 1 tbsp
Buttermilk 200 ml
2 eggs
Butter, melted and cooled, 4 tbsp
Blueberries 150 g
Oil or butter for greasing
Method:
Sift the flour, the baking powder, the baking soda, the salt, and the sugar into a large mixing bowl. Take up another mixing bowl and lightly beat the eggs in it. Next add in the buttermilk and the melted butter, and whisk. Pour this liquid into the sifted flour mixture and whisk. It is alright if there are a few lumps in the batter. Allow the batter to sit for around 20 minutes. Next up add the blueberries and gently fold into a batter. Heat a griddle or a cast-iron frying pan over a medium flame. Lightly grease the pan with oil or butter and ladle 1/4 cup of the batter for each pancake. When bubbles appear on top of the pancakes flip over and cook the other side until golden in color. Serve hot with maple syrup or with a sprinkling of icing sugar. This personally is one of my favorite breakfast dishes.
